You can save over any old saves anytime you want, or alternatively you can choose to Start A New Game (Fresh from lvl 1) over any old save, which I believe would be the save effect as to erasing it. When I press 'Start Game' and then it brings up the 3 slots, there is a slot in which I have saved in and is unused so it would be good to delete
